PROCESS LAYOUT IN ADARSH BAKERY
Process layout which are also known as functional layouts or job-shop layouts, involve grouping of all the similar equipment or functions.
Process layout mostly uses general purpose machines that can be changed over rapidly to new operation for different product design.
In Adarsh bakery they follow process layout is as follows:
RAW MATERIAL → MIXING → SHAPE → OVEN (3-4Hrs)
Then FINISHED GOOD
Raw material (maida) mixed with other required ingredient and then a required shape is given to mixed material .Then it is kept in the oven for heating for minimum 3-4 hrs heating to get the finished good.
PRODUCE TO STOCK POLICY
According to this policy the, product are produce well in advance and are stored in warehouses, from where they are dispatched as peer the customer order this include product like toast, butter , khari ,cake, pastries etc.
PRODUCES TO ORDER POLICY
As per this policy production is start only after the company receives customer orders and halts production until another order is received. This policy is used specially for pav and fresh cake.

Objective - to understand the impact of recession on a small scale manufacturing unit
General Observation –
1. The bakery caters to the local population of Bhayander east & west
2. Most of the customers are middle –income segment
3. 60% of the bakery sales consists of bread; while remaining 40% comprises of other confectionaries like biscuits, pastries, cake-rolls, pizza breads…etc
On studying the sales figure of the bakery of the last 6 months….items to notice that, there has been a decrease in the overall sale quantity of the various items.
It is also notable that sales of bread is not much affected; while that of other confectionaries are showing a decrease in sale
It can be explained as… most of the people to whom the bakery caters belong to the middle income group. This group of people has been strongly affected by the recession season and their household incomes have become unstable.
Reason being…layoff, delay in salary payments, salary cuts, less work etc.
This is been one of the main reasons that families have cut down their additional expenses & luxuries eateries…. & are trying to glue down to basic requirements.
This fact is clearly visible even in a small unit like Bakery, where the sales of normal daily bread remains unmoved but other eateries have slow movement.
Steps taken by the Bakery management
They have reduced the raw material procurement in the first place.
They avoid unnecessary stacking of dry foods like wafers, pizza breads
The make-to-order type of management is made more applicable
They might reduce prices of items which are not moving from shelves for longer period.
