Popeyes Chicken & Biscuits (sometimes named Popeyes Louisiana Kitchen or Popeyes Chicken & Seafood; often referred to as just Popeyes) is a chain of fried chicken fast food restaurants, owned since 1993 by the Sandy Springs, Georgia-based AFC Enterprises, which was originally America's Favorite Chicken Company. According to a company press release dated June 29, 2007, Popeyes is the second-largest "quick-service chicken restaurant group, measured by number of units",[2] with more than 1,800 restaurants in more than 40 states, the District of Columbia, Puerto Rico and over 21 countries worldwide including Turkey, Bahrain, China, Hong Kong, Iraq, Indonesia, Jordan, Kuwait,[3] United Arab Emirates, Japan, Malaysia, Saudi Arabia, South Korea, Singapore, Canada, Jamaica, Guyana, Mexico, Trinidad, Honduras, Vietnam, Panama, and Costa Rica. Popeyes Mighty Good Fried Chicken first opened in Arabi, Louisiana, a suburb of New Orleans in St. Bernard Parish, in 1972 as "Chicken on the Run",[5] owned by Al Copeland. As the company's official history states, they sold "traditional mild fried chicken [but] business was slow, and the chicken team realized they'd have to sell a spicier alternative to their standard chicken recipe if they wanted to impress flavor-seeking New Orleanians.
Copeland began franchising his restaurant in 1976, beginning in Baton Rouge, Louisiana, and added approximately five hundred outlets over the next ten years. B.P. Newman of Laredo, Texas, acquired various franchises in Texas and surrounding states. Two hundred additional locations were added during a period of slower expansion. In 1989, Popeyes, then the third-largest chicken chain, merged with Church's Chicken, the second largest,[6] though parent company AFC Enterprises operated the two chains separately. On December 29, 2004, AFC sold Church's to Arcapita, formerly Crescent Capital Investments, retaining Popeyes.
On October 30, 2006, AFC announced that Popeyes planned to introduce a trans fat-free biscuit as well as french fries containing one gram of trans fat by year-end.

THE CHALLENGES

AFC had been using a business process outsourcing (BPO) model from a service bureau. However, the company wanted more functionality and in-house control of its payroll and workforce processes for enhanced report generation, data integrity, and cross-organizational efficiencies.

THE SOLUTION

AFC Enterprises selected UltiPro delivered with Software-as-a-Service (SaaS) and went live in November 2005—taking full advantage of UltiPro’s strategic reporting and HRMS/payroll capabilities.

“To its credit, Ultimate’s activation group walked in the door with a methodology that was executed to a T,” said Doug Griffin, HRIS and payroll director for AFC.

“Ultimate made sure we stayed on schedule, and when all was said and done, we came in under budget.”

Griffin and other leaders at AFC eagerly anticipated the rollout of UltiPro in order to benefit from point-in-time reporting, flexible options for analyzing business trends, and a library with hundreds of standard and customizable reports.

“UltiPro has been well-received by our corporate leadership, who appreciate the value of real-time workforce analytics,” said Griffin.

Using UltiPro’s ad hoc reporting, Griffin and his team are now identifying key performance indicators that evaluate labor costs and sales transactions.

With a range of business intelligence available by restaurant, state, job, or other metrics, AFC’s management team can compare sales-per-labor dollars against established benchmarks and guidelines. This data provides valuable assistance with decision-making about manpower, such as budgeting and forecasting of labor trends.

Additionally, AFC can handle ongoing corporate acquisitions and divestitures seamlessly—with minimal effort from its current staff.

Griffin also has attended several of Ultimate’s training courses to fully leverage the solution’s reporting capabilities. Ultimate uses a blended learning approach for training that lets customers select from instructor-led classes in traditional on-site classrooms, virtual classes, electronic Web conferences and training events, or online, self-paced training. Ultimate’s courses are task-based, enabling the participant to focus on the skills that he or she will be performing in UltiPro.

“Ultimate’s course instructors are highly tenured and extremely knowledgeable about the solution,” said Griffin. “The curriculum and content of the courses are both very complete, and the expertise we’ve gained as a result has really helped our company get the most out of UltiPro.”
