Kerala ‘s population is versatile and so also is Kerala Food .Kerala has different communities and the different communities in Kerala have their own special variety of dishes. The Hindus have a wide variety of vegetarian dishes such as parippu, pappadam, sambar, rasam, aviyal, olan, kaalan, pachadi, kichadi, thoran – the list is endless.The Christians and Muslims who are non-vegetarian have special delicacies in sea foods, chicken, mutton, pork,duck and beef. The food of the people have also been influenced by the european settlers – the French, the Portugese and the English. Many dishes have been borrowed from these cuisines eg. the fish molee - fish cooked in coconut milk - is a tasty delight and a part of the Portuguese legacy. Pan cakes and plum cakes also are hot favourites from the British.The Tea drinking like a ritual is again borrowed from these cultures.The famous Muslim biriyani ( a different version of the paella) is rice layered with meat that has been cooked with onions, chillies and other spices.
Kerala Food has a distinct flavour because coconut oil is the main medium used for cooking. Coconut milk an essential ingredient in most of the dishes and the use of coconut scrappings often adds a special flavour.
All these make eating Kerala Food a unique experience. The Food has the same characteristics of the land – the tasty food which varies from simple and homely to spicy and rich is a wonderful combination and is very much like the natural beauty of kerala and its warm hearted people..An opportunity to taste the tempting Kerala dishes should not be missed.A wide variety of fruits and vegetables are available in Kerala; this makes it easy to find food suitable for children and the older generation and for people who have a soft stomach.All kinds of combinations are available and once bitten by the Kerala Food bug you will want it again and again.
